MORTAR & PESTLE | SPICES | GRIND FRESH
Spices, like all things, are better when fresh. They are not designed to sit in powder form on a shelf year after year. Grind whole spices (i.e. coriander, black peppercorns, mustard seed, cumin, etc.) fresh in a mortar & pestle (or use an electric spice grinder) to enhance the flavors of your cooking.
M & Pās made of solid stone or metal are best, as these materials are nonporous and durable.
Cast iron and basalt (pictured below) are also used frequently. These materials are durable but will season with use over time, much like your favorite cast iron skillet.
